Try This: Classic Apple Pie

You've taken the kids apple picking and now you have an abundance of apples? Try this classic apple pie recipe for those sweet honeycrisp and granny smith apples!

Ingredients:

For the Pie Crust:
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup (2 sticks) unsalted butter, cold and cubed
- 6-8 tablespoons ice water

For the Filling:
- 6-7 medium-sized apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 tablespoons all-purpose flour
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract

For Assembly:
- 2 tablespoons unsalted butter, cut into small pieces
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
- Granulated sugar (for sprinkling)

Instructions:

**1. Prepare the Pie Crust:**

a. In a large mixing bowl, combine the flour and salt.
b. Add the cold, cubed butter to the flour mixture.
c. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
d. Slowly add ice water, 1 tablespoon at a time, and mix until the dough starts to come together.
e. Divide the dough in half, shape each half into a disk, wrap them in plastic wrap, and refrigerate for at least 1 hour.

**2. Prepare the Filling:**

a. In a large bowl, combine the sliced apples, granulated sugar, ground cinnamon, ground nutmeg, salt, flour, lemon juice, and vanilla extract. Toss until the apples are evenly coated. Let it sit for about 15-20 minutes to allow the flavors to meld.

**3. Preheat the Oven:**

Preheat your oven to 425°F (220°C).

**4. Roll Out the Pie Crust:**

a. Take one of the chilled pie crust disks and roll it out on a lightly floured surface to fit a 9-inch pie dish.
b. Carefully transfer the rolled-out dough to the pie dish, gently pressing it into the bottom and sides.

**5. Fill the Pie:**

a. Pour the prepared apple filling into the pie crust, spreading it out evenly.
b. Dot the filling with small pieces of butter.

**6. Roll Out the Top Crust:**

a. Roll out the second chilled pie crust disk on a floured surface.
b. You can leave it whole as a top crust or cut it into strips to make a lattice design.

**7. Assemble and Seal the Pie:**

a. Place the rolled-out top crust over the apple filling.
b. If using a whole crust, cut slits in the top for steam to escape. If making a lattice top, weave the strips over the apples.
c. Trim any excess crust and crimp the edges to seal the pie.

**8. Egg Wash and Sugar:**

a. In a small bowl, whisk together the egg and milk to make an egg wash.
b. Brush the top crust with the egg wash and sprinkle it with a little granulated sugar for a golden finish.

**9. Bake:**

Place the pie on a baking sheet (to catch any drips) and bake in the preheated oven for 45-55 minutes, or until the crust is golden brown, and the filling is bubbly.

**10. Cool:**

Allow the pie to cool on a wire rack for at least 2 hours before serving. This allows the filling to set.

**11. Serve:**

Slice and serve your homemade apple pie with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
